HEALTHY(ISH) ANZAC COOKIES

Nothing beats a good dozen of Anzac Cookies on Anzac Day - it's the most Aussie thing you can do, and they smell delish. I've made my own healthy(ish) version, I could probably do better - such as: using coconut oil instead of butter, and Rice Malt or Raw Honey instead of Golden Syrup. But I thought, what the heck, I'm using oats (which is totally and utterly against my Metabolic Type) so why not?
YOU WILL NEED:
1 Cup Oats (organic and gluten free, if you can't find proper oats you can substitute for organic quick oats)
1 Cup Gluten Free Flour (sub for coconut flour but you'll have to play with the formula to get the right texture)
3/4 Cup Butter (free range and organic, sub for coconut oil)
1/2 Cup Desiccated Coconut (organic)
1/3 Cup Coconut Blossom Sugar (sub for brown or raw sugar)
4 Tbsp. Golden Syrup (organic, sub for raw honey or your choice of sweetener)
1/2 Tsp. bicarb Soda
Preheat Oven and get baking tray ready with paper.
Mix all dry ingredients together (except bicarb)
Melt butter and syrup - until just melted, then add bicarb soda in, stir.
Add all mixtures together and make balls should make 12-15.
Place on paper, flatten and pop in the oven.
Bake for 17-20mins depending on your oven and my Mum said if you want them chewy you can bake longer on lower heat.
Please note, these are amazingly delish! However, they are a healthier version so the taste may vary to real Anzac cookies.
